Goat Cheese Spread in Roasted Pepper Cups:

Ingredients:

  • 4 Sweet red peppers
  • 3 Tablespoons olive oil
  • 1 medium onion
  • 4 minced garlic cloves
  • 8 ounces softened cream cheese
  • 1 cup grated Parmesan cheese
  • 2-3 finely chopped tomatoes
  • 2 Tablespoons minced fresh cilantro
  • 1 Tablespoon minced fresh parsley
  • ½ Teaspoon hot pepper sauce
  • 1/8 Teaspoon salt
  • 1/8 Teaspoon pepper

Directions:

  1. Cut the tops off of each pepper and remove the seeds; rub peppers with 1 tablespoon of olive oil. Put each pepper in an unoiled 8-in. baking dish; bake uncovered at 350 degrees for 15-20 minutes. Remove from oven and turn over peppers in baking dish to drain.
  2. In a skillet, sauté onion in remaining oil; add garlic and cook for one minute longer. Transfer to a large bowl then stir in cheese, tomatoes, cilantro, parsley, pepper sauce, salt, and pepper. Spoon into pepper cups and return to baking dish.
  3. Bake, uncovered at 350 degrees until heated through, 25-30 minutes.
