Ramps, also known as wild leeks, are a beloved springtime find in the Catskills and among the first edible plants to appear after winter. Their bold blend of garlic and onion flavors, along with a boost of vitamin C, makes them especially popular with home cooks and professional chefs. If you head out on a hike in the woods or mountains, you may spot them, but be mindful when harvesting. Take only a small amount, as these plants are slow to recover and won’t grow back if overharvested.
