Apple/Peach Month

It’s not summer without peaches and apples! Check out this fresh peach salsa recipe, perfect for parties or an afternoon snack. Looking for ingredients? While you cook, put on “Peaches” by The Presidents of the United States of America, “If I had my little way, I’d eat peaches everyday!”

 Fresh Peach Salsa

Ingredients

  • 3 ripe peaches
  • 1 roma tomato, roughly chopped
  • ½ jalapeno, seeds removed and roughly chopped
  • ½ small purple onion, roughly chopped
  • ¼ cup cilantro roughly chopped
  • 1 lime, juiced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Garnish: additional cilantro

Directions

  1. Carefully cut peaches into ¼ inch cubes
  2. Put all the other ingredients in a chopper or food processor for a rough chop. Don’t pulverize, but get the pieces pretty small.
  3. Mix the peaches and salsa mix together.
  4. Garnish and serve!

Notes: For more spice keep the seeds in the jalapeño or add more jalapeño and serve!
