Did you know that cauliflower is a great meat substitute? Try out this recipe for buffalo cauliflower and grab your cauliflower at one of these local farms or farmers’ markets: RSK farm, Dream Weaver Farm, Horton Hill Farm, Barryville Farmers’ Market, Mamakating Farmers’ Market.
Buffalo Cauliflower
Ingredients
- 1 cup of flour
- ½ cup of milk
- 1 tsp of onion powder or onion salt
- 1 tsp of paprika
- ½ tsp of garlic powder
- 4 cups of cauliflower florets, about 1 medium cauliflower
- ½ cup of buffalo sauce(Frank’s works)
- 2 tbsp. of butter
Directions
1. Cut the cauliflower into pieces. Remove most of the stem and chop the cauliflower into bite-sized pieces.
2. Preheat the oven to 450 degrees F and line a baking pan with parchment paper.
3. Make the batter. In a large bowl, combine the flour, milk, onion power of salt, garlic powder, and paprika in a bowl and mix until smooth.
4. Add the cauliflower florets to the mixture and toss to coat.
5. Place florets in a single layer on a baking sheet.
6. Bake for 20-25 minutes until golden brown, flipping halfway through.
7. Make the Buffalo sauce. Mix the hot sauce and butter(melted) together in a bowl.
8. Pour the Buffalo sauce evenly over the cauliflower and toss to coat.
9. Bake the florets again for an additional 10 minutes or until crispy and just starting to brown.
10. Serve and garnish with fresh chopped herbs if desired, and then serve with your favorite dipping sauce
Notes
Feel free to add other spices you like. You can also use crushed crackers or crushed pork rinds to garnish.
